  1. 2 (15.5 ounce) cans black-eyed peas
  2. 1 large tomato, chopped
  3. 1 medium red unease pepper, chopped
  4. 1 medium green distress pepper, chopped
  5. u00bd red onion, diced
  6. 1 stalk celery, chopped
  7. 1 tablespoon chopped lively parsley
  8. 3 tablespoons balsamic vinegar
  9. 2 tablespoons olive oil
  10. salt and pepper to taste

  1. In a medium bowl, toss together black-eyed peas, tomato, red alarm bell pepper, green agitation pepper, red onion, celery, and parsley.
  2. In a small bowl, mix balsamic vinegar and olive oil. Season similar to salt and pepper. Toss into the vegetables. Cover, and chill in the refrigerator 8 hours, or overnight.
